Brunch Recipe | Pancakes
























It's weekend time again and here's another brunch recipe to try.  We (us Brits) usually have pancakes on Shrove Tuesday (aka Fat Tuesday) but I don't think it should be saved for just once a year.  It's quick, simple and easy and a change from the usual eggs and bacon.  
























Serves 2-3

What you'll need

- 1 Cup/4oz/110g of plain flour

- 2 large eggs

- 200ml/7 fl oz milk

- 75ml/3 fl oz water

- 2 tbsp butter

- Clear runny honey

- Strawberries

- Blueberries

- Lemon

- Butter or oil for frying

How it's done

Sift the flour into a large mixing bowl, this helps get air into the flour to make the pancakes light and fluffy.

Make a well in the centre of the flour and add the eggs.  Whisk with a fork until the eggs and flour are combined.

Combine water and milk then gradually add to the flour and egg mixture to form a batter.  Once all the milk has been added, ensure that all the remnants of the flour on the side of the bowl are incorporated (a rubber spatula works a treat).

Melt the butter in the microwave for approx 30 secs or until melted, taking care not to let the butter boil or burn.  Add to the batter.

Whisk again until all the mixture is combined and the batter is smooth.

Set a pan on a high heat until the pan is hot, then turn down to medium. Add a small amount of butter or oil to lightly and evenly coat the base of the pan.

Add a small ladle full of batter to the centre of the pan then quickly move the pan from side to side to make sure the batter is evenly distributed.  

Fry until slightly browned on one side and then flip over using a fish slice or palette knife, or you could just flip it by tossing the pan (this is where the fun starts).  Be warned, many a pancake has landed on heads/floors/ceilings using this method, but it's by far the best and most fun.  Cook for a few seconds until golden brown and then serve.

Don't worry if your first pancake doesn't quite turn out like you'd expect it, the first one is always a little suspect looking.
























Pick out some strawberries and blueberries, squeeze a little lemon and drizzle a generous amount of honey on top.  I like to stack my pancakes up and then add the toppings but you can eat them individually too.  Experiment with toppings! :)

Snapshot | Seattle

If you have been following my blog, you will know that we did a quick trip up to Seattle back in February.  So I thought I would share my Instagram journey to give you an idea of what we got up to whilst we were there.  

One thing Seattle has to offer is great restaurants and seafood. And as you can probably tell, we did a lot of eating out... 'shock-horror'! The weather was just like it is back home: grey, wet and miserable.  I was pleased though, because it meant that I could finally wear my handmade Garter Gaitor cowl and we could warm up with some traditional New England clam chowder!  Yummers !!!  We also visited the famous Pike Place Market, the Space Needle and the original Starbucks (previously known as: Seattle Coffee Co.).  We also found an amazing crumpet shop which is run by a little old English lady.  Sadly, I didn't get to meet her, it was just closing as we walked by it.  But PC ran out the next morning whilst I was getting ready and picked us up a plain crumpet, a cheese and tomato crumpet and a salmon and cucumber crumpet.  And as a treat he also got me a Crumpet Shop mug: what an absolute cutie he is!!!  I'm more of a traditional salted butter gal when it comes to crumpets, so I personally preferred the plain ones.  But I have to say that they were probably the best I've ever tasted, and, dare I say it, possibly beat Warbuton's crumpets!

Breakfast Fruit Bowl


























How it's done:

- Take one lovely breakfast bowl

- Throw in a handful of fruit | strawberries and blueberries

- Add a dollop of plain greek yoghurt

- Scatter some seeds | sunflower and pumpkin

- Drizzle over some good quality   clear runny honey for some sweetness

- Devour

Collection 03 / Breakfast time

Breakfast is possibly my favourite meal of the day and as the saying goes: Eat like a King in the morning, a Prince at noon, and a Pauper at night.  So when we get the chance, we like to set aside a good hour or so to enjoy a hearty breakfast.  Typically, I will make a pot of jasmine green tea using my red whistling tea kettle that I got as a present at Christmas.  It reminds me of my childhood and my Grandma's house as she also had a whistling kettle.  I always wanted to pour the tea even though it was way too hot for me.  PC will often grind up some fresh coffee beans in his fancy wooden coffee grinder to use in the stove top espresso maker.  When we don't grind our own beans we do have a love for Fortnum & Mason's coffee.  Fortnum & Mason is the quintessential English department store located on Piccadilly in London's West End.  It is said that this is where the Queen gets her groceries from (although I'm sure that she doesn't pop down herself with reusable shopping bags to get them).  I have brought over many tins of the 'King's Blend' coffee and my parents have just sent over a new batch as a birthday present for PC, so we're set for a few months now.  Below are some other items that are a delight to use over breakfast.
